Dyes/Pigments

Over the last 3 years, we have been interested in the wide variety of colors observed when anthocyanin-containing aqueous plant extracts are exposed to acids, bases, bisulfite ions, and certain metal ions. We designed all our experiments to use readily available materials and to be conducted at home.

Jet-Puffed color changing marshmallows are an interesting new product that is available on the shelves of grocery stores through the end of September.¹ The color of these marshmallows changes when exposed to heat: the blue version turns green, while the pink version turns orange.
